To swallow or not to swallow is a matter of choice, there is no right position on the matter.
My recommended technique for swallowing is to raise the tip of your tongue to the roof of your mouth and to let the ejaculate squirt against the bottom surface. Doing this will keep the semen from flying to the rear of the mouth and possibly triggering a gag reflex.
You can swallow the semen directly, or, with a bit of saliva, a drink of water or even wine. Semen is an acquired taste as is vaginal mucus.
Semen is comprised of a variety of compounds but is mostly protein and sugars. If a man changes his diet the solution can be made somewhat more "tasty".

You are extracting the semen from him; what you do with it is up to you. You may want to use a (dry) condom. He gets most of the pleasure and you do not get a mouthful. You do what is comfortable for you.
I agree that the taste can be unpleasant and I do not ever expect to learn to like it. I do enjoy the rest of the process.
