Ask her to raise the tip of her tongue to the roof of her mouth so that when you ejaculate it hits the bottom surface. Your responsibility is to give her sufficient warning so that she can do this; or, so the two of you can get into position for intercourse; or, so she can change tactics during the final moments of stimulating you.
As for actually swallowing, this is her perogative or not. If she wants to and is having trouble, suggest she take a drink of water to mix with the semen and then to swallow the mixture.

Sucking from her throat, not just with the mouth, also will help. Tell her you are coming and then just have her repeatedly swallow which will have the sucking effect. Then a drink would be nice.

Great advice about the drink after she swallows. It may be she just won't be able to swallow. The fact she has tried and is even willing to try again is great. It took my wife a long time (over 15 years) before she swallowed and then it was a long time after that she did it again.
