The following solutions come to mind:

1. Become a contortionist
2. Find and use a 1970s vintage car (they are much larger) and/or find a car with a bench seat instead of bucket seats
3. Find and use the bed of a station wagon
4. Take along a blanket and couple of pillows and when parked at "Inspiration Point" overlooking the city lights or whatever, lay out the blanket beside the car.

Actually, this is an age old problem. Years ago, the console and stick shift were facetiously referred to as a built-in birth control device. The rear seat in many a (larger) car became a popular place.

In the case of column shifts, many a guy received a hand job and/or oral while driving. NOT GOOD because at least in one case I'm familiar with, the driver's right foot began pressing harder and harder against the gas peddle!

Simply ask him to tell you before he comes - if you tell him you haven't done this before and just want to watch him come that should be fine.
Of course you are right and there does need to be an alternate place for him to come - one of the downsides of the male orgasm. If you are doing it in a bedroom or similarly comfortable environment (suggested), just sit him on a towel and let him come on himself.
Or you might consider letting it "go off" in your mouth as you keep going with whatever you are doing and just let the semen out of your mouth and drool down his shaft. This way you can get a feel for how his orgasm feels in your mouth, and then next time you will know what you are dealing with.
This is one of those things that you need to jump in the deep end, but still just go with what feel natural and comfortable to you. Comfort means you will enjoy it, and thats the most important part.

If he has herpes or something else contagious, then yes, there is a chance you may catch something. Personally, if I were to see sores, cuts, etc on someone's penis, that would be IT, no bj from me! I am monogamous, though, and so is my SO, so not a prob here.

My advice for someone just trying it......breathe through your mouth----yes, it can be done with a mouthful, with some practice (or hold your breath off and on like you are swimming underwater). This will eliminate any sense of smell or taste, which might be helpful if you're not sure if it will make you gag.

Having your SO do something erotic to YOU at the same time will likely make you more receptive to returning the favour, also.

As for taste, do a site search using one of the two search engines.
The taste is salty and an acquired taste. Not every person likes it or likes it the first time or two. You do not have to swallow, yet if you do, mix the semen with a drink of water, etc. Alternately, you can simply spit it out into a tissue.
