I like your idea, let me know how it develops. My guess is it would be very hard to find appropriate photographs, why not go with drawings? Maybe exiting descriptions? I feel sometimes it's just as exiting if not more to just see a hint of what is to come.

Why not gather the images on a computer and send each one as an E-mail attachment to a love letter?

If you are sending the images to her by phone, why not place a quick call to say "hi, I love you, please check your messages"? I prefer E-mail and as for privacy, many E-mail applications give you the option to open attachments automatically or not.
