I agree with Roywyn... Roses are always a good look as well for your lady. Valentine's is about allowing you mate to be in her element. Always good to take note of what you love about her and what she loves about herself. Try to combine the two.
Depending on what type of personality they have, tailor it to them. If she's romantic then do the candles with a slight twist each year to make sure it doesn't get monotonous i.e. say go bowling or biking in the park before dinner (alone not w/ the guys). If she's more social then invite some like-minded couples to dinner and allow her to entertain. That will enhance the mood for your own quiet time together.
