well, i'm a guitarist and the tips of the fingers on my left hand are pretty solid and rough. when fingering should i use my right hand because the fingers are softer or my left because it knows what to do?

Ask her which she prefers.
You might find that because a light touch is required, that the callouses won't matter. Dunno, which is why you need to test and see if changing hands does in fact matter.
If so, your right hand can be trained.
... or your right hand because you're right-handed?
actually i'm ambidextrous and my left hand is better at fingering than my right as i've only used my right once.

I'm a guitarist as well. I use both my left and my right, but I use only my right hand for the delicate work, as I can't feel things with the fingertips of my left hand. Also, be very careful of your fingernails if you're a classical guitarist. Those can really hurt her if you're careless.
my fingernails are pretty much non-existant so that's not a problem, i play death metal
Another thought is to apply hand lotion to your fingertips on a regular basis in order to condition and soften the skin. As a side benefit, the lotion will act as a lubricant, so that offered, you should try using a lubricant be it her natural mucus or a commercial product between your finger and her sensitive parts. No dry fingers.
Lotion can also mess up your strings. Just remember to start gently and ask her if anything hurts.
