Vegetarian Valentines

Okay so my girlfriend finally decided she wants to be a veg. Which is cool cuz I know she has never been a fan of steak or burgers. But it kinda threw off my valentines day dinner lol. So does anyone know any easy inexpensive vegetarian meals? I tried looking online but any meal I have found have been extremely complicated.

Lasagna made with tofu if a full Vegan.

There is a soy-based hamburger substitute that does a decent job of...well, substituting. It's usually with the tofu. Portobello mushrooms are supposedly a good substitute for steak, but it doesn't taste that great to me, plus the texture is rubbery.

Pasta. Fettuccine alfredo, with clams or oysters (if she eats fish) or mushrooms (if she doesn't.) Pair with a nice wine. Strawberries and chocolate for dessert. Best part is, even I can make that and have it taste good!

Run to the supermarket. Pick up a pack of fettuccine and a can of ready-made creamy alfredo sauce, and either canned clams/oysters or fresh baby bella mushrooms. Boil fettuccine. Dice mushrooms. Saute in butter. Heat up sauce. Sprinkle clams/oysters/mushrooms on top. Put on nice silverware. Turn the lights down a bit low and put candles out.

Oh and thanks for the advice everyone. I was hoping for something that I would eat too...since I have always and will forever be...a steak man haha. The lasagna soudns good....im still confused about how to cook the tofu though haha guess ill learn haha

You mix it in in lieu of the Ricotta Cheese.

A bit late with this, but better late than never;

A general tip on cooking tofu; pan fry or bake it with some oil then (most importantly) cook it in a tasty sauce or dish so it soaks up the flavours. To those who have problems with sticking in a pan; first heat the pan on medium heat, then add oil to cover, then add whatever ingredient in it, then do not prod the ingredients for a minute or so to allow it to brown and release by itself from the pan
Tofu acts as a base or a complimentary texture in dishes as it has very little flavour of it's own. It's one of the most versatile and nutrious ingredients out there. Hell, you can make some interesting low fat cheese cake since it can replace egg. I'm surprised it isn't more commonplace in the kitchen.
