Because:
1. it isn't real
2. it is BORING!
I am one of those who would rather DO than watch; even if it is another couple in real life. Watching just does not thrill me.
The thrill of the first caress, the blood singing in the veins, the rush, the exhilaration of actual sex with another person - NOTHING LESS COMES EVEN CLOSE! And I do not want to waste the time watching when I could be experiencing.

You learn more by doing. The more partners you have, the more you learn. The closer you get to your partners, the more you learn esp. if your partners are experienced.
I've done it once with someone, we were both a bit more than tipsy... It was alright and lead to pretty good sex, I'd do it again. I know porn is not real and is always derogatory and focussed on the male's pleasure and not a good learning tool, but my gf did learn a couple of techniques from it and tried them to great success which is mostly why I'd do it again.
