me and my girlfriend are both in our 20s and obviously not new to sex but this confuses me... When we have sex she will say she has to pee then stop run off to the bathroom and go. Is this the beginning sign that she is going to ejaculate and just thinks she has to urinate? This only happens during intercourse.

Make sure she goes before you guys start. As long as you're not drinking a bunch of water or beer, she's probably good for another half hour or so, at the least.
Her feeling of having to pee, may be related to orgasm, or really hitting the 'spot' and she's afraid it means she has to pee.
Make sure she's already gone and work through the next one to see how it goes. I'm sure she won't pee the bed.
Intercourse itself can put pressure on the bladder and make her feel she has to go. Have her try to before sex and always after. The infection thing is true. If not then just resume your fun when she gets back. Heck I take breakes to pee, get some water and any number of things.
if she really needs to go, she definately should. My sister got a bladder infection due to not urinating when she had to and not stoping to go before intercourse. She may not realize she has to go until after you have started. Maybe it is something else, but if she needs to go, it would be a good idea that she does. A bladder infection is supposed to be pretty unpleasent.
It's not necessarily that she's going to cum or whatever, it's just well, the hole we pee out of is right by the clit.
Stimulating the clit generally gives us the feeling of wanting to pee and will sometimes actually make us pee.
