Ah, the old "foot in mouth" disease.
I think Wally and Lily, both, have good ideas. It really depends on how reasonable/forgiving your wife wants to be.
Sometimes a simple "I'm sorry. I didn't mean anything bad by what I said." will work. Maybe followed by, "What I really meant to say was that you are more beautiful- not only than the other two women- but ANY other woman."
Flowers are also nice (her favorite kind).
